I have been cooking a lot more since starting WW. I really enjoy it. I also love the Food Network! I think I could watch it all day.
Here are some of my recipes that I make frequently.
Crockpot Chicken and Stuffing (4 servings)
1 lb. boneless, skinless chicken (breasts or tenderloins)
1 box Stovetop stuffing, any flavor (I usually use chicken)
1/2 cup water
1 can low fat cream of mushroom soup
1 cup chicken broth
In a medium bowl combine soup, water, and stuffing. Place chicken in crockpot and cover with broth. Pour soup mixture over chicken. Cook on low for 7-8 hours.

Pizza (6 servings)
1 tube refrigerated pizza dough ( I use Pillsbury)
5 tbsp. pizza sauce
10 slices of Hormel Turkey Pepperoni
8 oz. of reduced fat mozzarella cheese
Preheat oven to 425. Spray 9 x 12 casserole dish with cooking spray. Roll out dough and press sides. Spread pizza sauce evenly over dough. Top with cheese and pepperoni. Bake for 20 minutes or until cheese is bubbly and golden.

Blue Cheese Stuffed Turkey Burgers (4 servings)
1 lb. lean ground turkey
1 tsp. poultry seasoning
3 oz. blue cheese crumbles
1 tbsp. olive oil
Mix ground turkey and poultry seasoning, form into patties. Place blue cheese crumble in center of patties, fold over. In large skillet, heat olive oil. Place patties in skillet, cook on medium 6 minutes each side. (7 pts. per patty)
White Pizza (8 servings)
One 12 inch Boboli crust
1 tsp. Olive Oil
3 cloves garlic, minced
1/4 cup fresh chopped parsley
6 oz. marinated artichoke hearts, thinly sliced
4 oz. shredded provolone cheese
4 oz. shredded mozzarella cheese
1/4 cup parmesan cheese
Preheat oven to 500. Brush pizza crust with olive oil. Spread minced garlic over crust. Top with cheeses. Place artichoke hearts over cheese. Bake at 500 for 6-8 minutes, until cheese has melted. Top with fresh parsley. (5 pts. per slice)
Taco Casserole (6 servings)
1 lb. lean ground turkey
1 cup Old El Paso mild taco sauce
1/4 cup diced onion
2/3 cup water
4 oz. green chiles
12 regular taco shells (Old El Paso)
1 oz. Old El Paso taco seasoning
8 oz. low fat shredded cheddar cheese (I use kraft 2%)
Preheat oven to 375.
Spray 9 x 13 inch baking dish with cooking spray
Brown turkey and onion, drain.
Add taco sauce, water, taco seasoning, and chiles to turkey mixture, simmer on low for 3-4 minutes.
Layer half of the tacos (broken up) at the bottom of the casserole dish, cover with turkey mixture, sprinkle 1/2 of cheese on top, layer again with tacos, turkey, and cheese.
Bake for 20 minutes.

B.L.A.T. Wraps (4 servings, 9 pts. per wrap)
4, 10-inch flour tortilla wraps
8 slices crisp bacon
1 tomato, diced
shredded lettuce, 1 cup
1 avocado, peeled, pitted, and diced
4 Tbsp. Ranch Dressing
Cook bacon until crisp. Drain, crumble, and set aside.
Warm tortillas in microwave for 30-45 second or until soft. Spread 1 Tbsp. of ranch dressing down center of each tortilla. Layer bacon, avocado, tomato, and lettuce over dressing. Roll the tortilla around ingredients.
