Chris and I purchased a pressure cooker/steamer yesterday. We made yummy vegatable soup, 16 pints! It was an all day process, but will be worth it.

This is great! I’m not a huge fan of tuna, mostly because there is mayo involved in tuna salad. Until I read in RR’s issue this month that she uses lemon juice and EVOO in place of mayo. So I found this recipe. Enjoy!

This tastes great! The dressing is especially yummy.
Changes I made:
Used canned mandarin oranges
Used chinese noodles instead of frying wontons
Used rotisserie chicken breast

This is the first veggie burger I have ever made. I was a little worried how it would taste but it was excellent. The chipotle ketchup really makes it great.

I made this tonight and it reminds me of the Rigatoni I get at Muriale’s.
I used store bought spaghetti sauce instead of making the marinara. I also doubled the recipe so we would have plenty of left overs.

Tried this recipe last night and it is very good. I served it with pita chips, but I tried some cut up carrots today with it and that is great too.
FYI, I didn’t use nearly the amount of olive oil it called for, probably 1/2.
